Hi, I’m Cheryll, and I am the creator of Beyond Vegan Bites. I’m thrilled to share my story and help guide you on your health journey. At 60 years young, I’ve spent years exploring different diets. After 20 years of following a vegan diet, I made a life-changing decision to introduce meat back into my diet in July 2024. This shift was prompted by health issues I was experiencing. I had constant gas, bloating, frequent nighttime urination, poor sleep, and brain fog. Something had to change, and I was desperate.
My Journey and How it Started
My journey began when I stumbled upon a YouTube video featuring Will Tennyson and Dr. Paul Saladino. I was immediately captivated by the concept of the Animal-Based diet, which emphasized the inclusion of meat, organs, fruit, honey, and dairy for Optimal Human Performance. This approach resonated with me, especially after Dr. Paul Saladino highlighted the powerful benefits of these whole, nutrient-dense foods for overall health. Later, I watched another video with Dr. Paul Saladino and Joe Rogan. This further convinced me to try incorporating meat into my diet again. I felt cheated by the vegan community after realizing how much false information I had been fed, especially after seeing the scientific basis behind Paul’s approach.
I Finally Made the Switch from Plants to Protein
In July 2024, I decided to make the switch. I eliminated seed oils, processed foods, and sugar, and started incorporating an Animal-Based diet. My first meal was lamb chops. I figured if I could do that, I could handle anything—and it tasted amazing!
From there, I dove headfirst into the Animal-Based lifestyle and quickly began to see improvements in my overall health. I was so inspired by the positive changes that I started watching everything Dr. Paul Saladino had to offer. I was convinced I was on the right path. Then I began watching videos from experts like Sally K. Norton, Dr. Annette Bosworth, Dr. Eric Westman, and Thomas Seyfried. Their insights led me to further refine my approach, lowering my carb intake and reducing the amount of oxalates in my diet. As a result, I noticed even more improvements in my health. I felt lighter, more energetic, and my mental clarity returned. The science behind these changes fascinated me.
Incorporating Cyclical Keto into Keto and Low-Oxalate Lifestyle
After embracing the keto and low-oxalate lifestyle, I decided to incorporate cyclical keto into my routine. This allowed me to enjoy higher-carbs with the Animal-Based diet while maintaining the benefits of the keto and low-oxalate lifestyle. I found that this flexibility helped me support my hormonal health while continuing to enjoy the vitality that keto and low-oxalate eating had provided. This approach gave me a balanced and sustainable way to nourish my body.
Discovering the Benefits of the Keto Diet
The keto diet not only helped me address my immediate health concerns but also opened my eyes to the long-term benefits of low-carb, moderate protein, and high-fat eating. With a focus on whole, nutrient-dense foods, this diet reduces inflammation, supports brain health, and helps manage blood sugar levels. These benefits are especially crucial for someone in their 60s, but they can benefit people of all ages. Gone were the midday crashes, brain fog, and the frequent hunger I often experienced as a vegan. As I transitioned further into keto and low-oxalate living, I began to feel the best I had in years.
My Transition to Low-Oxalate Living
One of the most eye-opening discoveries during my journey was the impact of oxalates on health. Oxalates are naturally occurring compounds found in many plant-based foods. While they are considered healthy in small amounts, too many oxalates can lead to various health problems. I realized that many of the issues I had experienced on a high-oxalate vegan diet, such as digestive discomfort and joint pain, were linked to oxalates. Through the guidance of Sally K. Norton, I began reducing high-oxalate foods like spinach and almonds and saw even greater improvements in my well-being.
Cyclical Keto and Animal-Based Recipes
The main focus of Beyond Vegan Bites is keto and low-oxalate living. I will also incorporate cyclical keto principles from time to time, particularly through Dr. Paul Saladino’s Animal-Based diet. This diet supports hormonal health and well-being by providing nutrient-dense, whole-food options. As a result, I will be adding more recipes and information about the Animal-Based diet for those interested in cyclical keto.
